Instructions

First, prepare the chickpeas. If you are using dried chickpeas, soak them in water overnight for at least 12 hours. Then drain and dry them. If you are using canned chickpeas, simply drain and rinse them. Once your chickpeas are ready, place them in a food processor along with the onion, garlic, parsley, coriander, cumin, ground coriander, cayenne pepper, and salt.

Blend all the ingredients together until a fine mixture forms. Make sure the mixture is not completely smooth; it should have a slightly coarse consistency. Then add the baking powder and flour to the mixture and mix well. If the mixture is too wet, add a little more flour so that it holds together when you squeeze it in your palm.

Once the mixture is ready, shape it into small balls or patties about 3-4 cm in diameter. Try to make all the falafels the same size so they fry evenly. Now heat oil in a pan over medium-high heat. Carefully place the falafels into the hot oil and fry them until golden brown, which should take about 3-4 minutes on each side.
