Add a teaspoon of Dijon mustard, juice from half a lemon, a pinch of salt, pepper, and a bit of dried onion or chives if you want to enhance the flavor. If you like, you can mix in a teaspoon of olive oil – it will soften the dressing but still keep it diet-friendly.
Finally, mix the yogurt dressing with the vegetable-potato mixture, gently stir, and let it rest in the fridge for at least an hour. This will allow the flavors to blend beautifully, and the diet potato salad will be ready to serve.
