  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 chili pepper (chopped, to taste)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the onions: Start by peeling the onions and slicing them into thin slices. This step can be somewhat time-consuming, but careful slicing is key to evenly caramelizing the onions, which will give the chutney its characteristic flavor.

  2. Caramelization: Heat olive oil in a large pan over medium heat. Add the onions and cook, stirring occasionally, until they soften and turn golden brown. This process takes about 15–20 minutes. It's important that the onions are properly caramelized, as this gives the chutney its sweet and deep flavor.

  3. Add spices: Once the onions are caramelized, add the chopped garlic, ginger, cinnamon, cumin, coriander, and chili pepper. Continue cooking for another 5 minutes until the spices release their aroma.

  4. Sugar and vinegar: Add the cane sugar and balsamic vinegar. Stir until the sugar dissolves. Then reduce the heat and let the mixture simmer slowly. It's important to stir regularly to prevent the chutney from sticking to the bottom of the pan. Cook until the mixture reduces and achieves a thick consistency, which may take 45–60 minutes.

  5. Season: Once the chutney reaches the desired consistency, taste it and add salt and pepper to your liking. Then let the chutney cool.

  6. Storage: Pour the finished chutney into sterilized jars and seal well. Properly prepared chutney will last for several weeks in the refrigerator, and it might even taste better as it matures.
