Citrus Junos, also known as Yuzu or Yuja in Japanese and Korean culture, is a lemon fruit characterized by its intense, complex aroma and pleasant acidity. It is native to Asia, where it has been widely used in gastronomy for thousands of years. It is still little known in Europe, but its unique flavour and versatility make it a standout on the gourmet market. Compared to common citrus fruits such as the orange or lemon, the Yuzu is smaller in size, irregular in shape and has a particularly thin and thick rind, which is usually green to yellow.
Yuzu is used in many products. Its flesh and rind are often added to jams, marmalades and syrups, where they leave a slightly sour and fresh taste. In Japan, Yuzu is also used in traditional cuisine, for example in festive dishes, sauces, soups or sushi. In Korea, it is a popular ingredient in hot drinks such as tea or mulled wine. The aroma of Yuzu is also found in the cosmetics industry, where its essential oil is used in perfumes, creams and other cosmetics. Thanks to its fresh and energizing aroma, Yuzu is also used in aromatherapy. In recent years, it has also become very popular in the distilling industry, where it is a key ingredient in some types of gin and liqueurs.
