Tartrazine (CI 19140), also known as E102, Acid yellow 23, CI Food Yellow 4, Hydrazine yellow, Tartrazine, CI Food Yellow 4, Tartrazine, Amarillo, Japan Yellow 4, FD&C Yellow No. 5, is a synthetic food colorant with a yellow tinge. It was developed in 1884 and its use is permitted in many countries around the world, although some countries, such as Norway and Austria, restrict its use due to potential health risks.
This substance is very often found in products where a yellow tint is required. It is widely used in the food industry, where it is used to colour various types of confectionery, jelly sweets, popcorn, crisps, biscuits and other sweets and savoury pastries.
