Sorbitan stearate, also known by the names Sorbitan stearate, Stearic acid monosorbitanester, Sorbitanstearate, E 491, Sorbitanfettaeurestearate, Sorbitanmonostearate or Sorbitan stearate is a chemical substance that is used in the food industry as an emulsifier. This means that it helps to order ingredients that would normally separate, such as water and oil. It finds its application mainly in the production of confectionery, baked goods, sauces, meats, ice cream, but also in the cosmetics industry.
It is a colourless to slightly yellow solid with an almost neutral taste and odour. Chemically, it is an ester of sorbitol and stearic acid, a so-called non-ionic emulsifier. Although it is considered a safe additive, it may cause allergic reactions in some people and should therefore be used with caution. Sorbitan stearate is approved and regulated by the European Union, where it is labelled E 491. Despite its widespread use in the food industry, it is good to know that it is also used in the medical and pharmaceutical industries, where it aids the absorption of medicines.
