The mountain sage, also known as Clinopodium montanum, Micromeria Montana, Saturiastrum montanum, Thymus montanus or Winter savory, is a semi-shrub of the deaf-horn family, native to southern Europe. This herb is popular for its distinctive, slightly spicy and peppery aroma and flavor. Its aroma is extremely similar to that of the good thyme, but is more intense and pungent. The leaves of mountain sage are narrow, stiff, dark green and leathery. It flowers from July to September with small pink or white flowers.
Mountain sage is used in a wide range of food products. It is an essential ingredient in the French herb blend 'Herbes de Provence', which is used in marinades, sauces and roast meats. It is also added to cheeses, soups, stews, vegetable salads and is suitable for seasoning beef. It can also be used in the production of liqueurs and aromatic oils. It is used in folk medicine for its antibacterial, antiseptic and digestive properties. It is also one of the few herbs that retains its full flavour even when stored or cooked for long periods. Because of its ability to improve digestion, it is often included in seasoning blends for fatty and hard-to-digest foods.
