Pullulan, also known as E1204 or Pururan, is a polysaccharide produced by yeast in the form of a white to slightly sweetish powder. It is a non-toxic, non-flammable and, above all, easily soluble material, its main uniqueness being its ability to form thin, transparent and uniform films that resist mechanical attack and retain water. Due to these properties, pullulan is often used in a number of industries, including the food, pharmaceutical and cosmetic industries.
When looking at specific products where pullulan is used, the food industry comes to mind, where it serves as a stabilizer, thickener or flavor carrier. It is therefore found in various sauces, soups, dressings, but also in confectionery and chewing gum. Thanks to its film-forming properties, it is also often used in food packaging, where it contributes to better preservation. In the pharmaceutical industry, pullulan is mainly used in the manufacture of drugs and tablets, where it serves as a binder or filler. In the cosmetics industry, it is often used as a moisturizing agent in skin creams, masks and other skin care products.
