Propyl Gallate, also known as Propyl-3,4,5-trihydroxybenzoate, or E310, is a chemical used primarily as an antioxidant. It is a synthetic substance that has very strong antioxidant properties and is therefore widely used in the food industry. It is mainly used as a stabilizer and preservative to prevent oxidation of fats. In this way, it helps to prolong the shelf life of foods and protects them from rancidity.
Propyl gallate finds application in a wide range of food products. Manufacturers add it to foods where it is essential to prevent oxidation, such as fatty foods, powdered milk, desserts, ice cream, oils and fats, and various meats and meat products. But it also finds applications outside the food industry. Propyl gallate is also often used as an antioxidant to prevent the degradation of certain pharmaceuticals or as a stabilizer in cosmetic products to prevent their rancidity or loss of nutrients. However, the maximum recommended amount of 0,02 % of the total weight of the food must always be observed to avoid adverse effects on the health of the consumer.
