Pistachios are generally known as a tasty and nutritious snack that can be eaten both raw and roasted. However, their use is much broader and extends to a variety of food sectors. In the confectionery industry, for example, pistachios are used as a candy filling, as a base for ice cream or as a decorative and tasty element for cakes and other desserts. They are also a popular ingredient in salads and some hot dishes, for example in Middle Eastern cuisine. In addition, the fruit is used to produce pistachio oil, which is used either directly in the kitchen or in the cosmetic and pharmaceutical industries. In terms of its medicinal properties, eating pistachios can have a positive effect on heart health, promote healthy cholesterol, improve digestion and help maintain healthy blood sugar levels.
