Millet (Panicum miliaceum)

Other names: millet

Harm score: 1 (Natural substances)

Millet, also known as millet, is one of the oldest cereals to have been cultivated in human history. Originally from Asia, this cereal crop is most widespread in the steppes of northern China, Russia and Mongolia. Because of its high requirements for sunlight and temperature, but low requirements for soil and moisture, it is considered a very undemanding crop to grow. Millet is rich in minerals, vitamins such as folic acid, niacin and thiamine, and high in fibre.

The uses of millet are very diverse - in the form of whole grains it is often added to soups and porridges, but it is also used to make flour. It has a fine texture and a pleasant brownish colour, is gluten-free and is therefore popular among people with coeliac disease and other gluten intolerances. It is very often used in the production of healthy pastries, pasta, breakfast muesli and coffee substitutes. Millet is also widely used in health food, for example in the form of flakes added to yoghurt, muesli and other breakfast menus. Thanks to its high protein and fibre content, millet is a popular part of the diet of vegans and vegetarians.
