Star anise, which is also known as Chinese anise, star anise, fragrant star anise or star spice, is a plant native to southwest and east Asia. This evergreen plant belongs to the star anise family and can grow up to eight metres tall. It is known for its characteristic brown star-shaped fruits, which contain musky smelling seeds. Due to this specific aroma, the star anise is used in many cuisines around the world.
The culinary uses of star anise are very diverse. Its intense flavour and aroma make it particularly popular in Asian cuisine, where it is included in many traditional recipes. It is added to meat, soups, sauces or desserts. Star anise is also one of the ingredients of the popular Chinese five spice. But its use extends beyond the kitchen. The fruits of star anise are a source of anethole, a substance used in pharmacy and cosmetics, and can be added to herbal teas. They also yield an essential oil which is used in perfumery and in the production of liqueurs such as the well-known pastis. Last but not least, star anise is also used in aromatherapy for its calming effects.
