Disodium Pyrophosphate is a chemical compound used mainly as an additive in the food industry. Under the name E450 it is used as an acidity regulator, humectant or stabilizer. It is a white, crystalline powder that dissolves quickly in water. It has a slightly acidic taste and is odourless. This substance is also known by the names Disodium diphosphate, Sodium pyrophosphate acid, Disodium dihydrogen pyrophosphate, Sodium Acid Pyrophosphate, Disodium Dihydrogen Diphosphate and Sodium Diphosphate.
Disodium Pyrophosphate is often used in the manufacture of various baked products such as buns, biscuits, custards, puddings and rolls, where it acts as a leavening agent. It is also used in the meat industry to increase the juiciness and improve the appearance of products such as sausages, ham and salami. In cheese production, it provides better consistency and flavour. E450 is also found in some brands of toothpaste where it acts as an emulsifier and stabilizer. Despite its widespread use, Disodium Pyrophosphate is considered safe for consumption, although it may cause minor side effects such as indigestion in some people.
