Astaxanthin


Astaxanthin, also known as sodium glycolate or sodium 2-hydroxyacetate, is a powerful antioxidant found mainly in marine organisms such as crayfish, crabs, crawfish and especially in salmon, which it gives its characteristic pink colour. This substance belongs to the carotenoids, a group of pigments that give fruit and vegetables their colour. Astaxanthin is characterised by its excellent antioxidant properties, thanks to which it can help protect cells from the damaging effects of free radicals.

Astaxanthin is used in a number of areas. One of these is in the food industry, where it is used as a natural colouring agent and as a feed additive for fish and crustaceans, where it performs an important function in their growth and development.
