Anthocyanins (Anthocyanins or also E163) are natural plant dyes found mainly in fruits and vegetables with red, blue or purple colour. They are flavonoids, a group of substances known for their antioxidant effects. The main sources of anthocyanins include berries such as blueberries, raspberries, blackberries or elderberries, but also red wine, red onions or cherries and some vegetables such as red potatoes.
Anthocyanins are often used as food colourings for various products. In the European Union, they are labelled with the code E163. They are used, for example, in sweets, jams, ice creams, fruit drinks, but also in some types of cheese. Their advantage is that they are natural substances that are not harmful to the body. On the contrary, thanks to their antioxidant effects, they can act as a preventive measure against certain chronic diseases, such as cardiovascular diseases. Anthocyanins also contribute to the attractive appearance of foods by giving products an intense and appealing colour.
