Anethole, also known as trans anethole, 1-(p-Methoxyphenyl)propene, Isoestragole, p-propenylanisole, or anethole, is an organic substance belonging to the phenylpropanoids that make up the essential oils of some plants such as fennel, star anise, and laurel. This substance is found mainly in anise and aniseed spirits, where it overshadows all other constituents. Its pleasantly sweet and spicy taste makes it popular in the food and cosmetic industries.

Anethole is mainly used in the food industry, where it is a component of sauces, ice creams, confectionery, beverages or medicines. It has a strong sweet taste that is up to thirteen times more intense than that of sucrose. It is therefore often used as a flavouring agent not only in food but also in the tobacco industry. Due to its specific aroma, anethole is a popular ingredient in many perfumes and cosmetic products, where it provides a unique base for creating different scents. In aromatherapy, anethole is used for its relaxing and antiseptic properties. Scientists are also investigating its potential anti-carcinogenic effects, although the results are not yet definitive.
