Kombucha is a pleasantly fizzy refreshing drink. Unlike other products on the market, this kombucha is not pasteurized. This means it is still a living product in the bottle. If the kombucha is not bubbling, just leave it at room temperature around 20°C or more, it will soon wake up to life and you will be able to enjoy it.
Kombucha is produced by a traditional Czech producer, what does he say about the production? "Here in our plant, primary fermentation begins in the production tanks. When the pH is below 4.0, the kombucha is ready for bottling. There is no more oxygen in the filled bottle (anaerobic terms) and secondary fermentation can begin. The temperature in the warehouse is very important - we heat the warehouses to 24°C to allow the kombucha to produce some carbon dioxide. The final amount depends on the volume of the bottle, the temperature and the raw materials used. The CO2 level increases over time. But because it is a natural product, it is impossible to control the process in the bottle with absolute precision. Variations are possible and cannot be considered a problem."
You may know some kombucha that always has the same carbon dioxide level - very likely they are pasteurized and artificially saturated with CO2. These "kombucha products" are closer to sodas like cola, etc. And that's definitely not our way.
Traditionally, this drink is made by fermenting black tea with sugar via a tea mushroom - kombucha. However, you can also enjoy variants made from green tea or herbs. Kombucha consumes most of the sugar during the fermentation process, so you don't have to worry about the drink being too sweet.
